Marmalade sponge cake - The Baking Bug strikes Again!




The Baking Bug seems to bite me every time I happen to go through food blogs!

This bug is responsible for my not-settling-for-anything-less-than-a-convection-oven attitude when I was going through the microwave-oven survey phase.

Did I mention that I absolutely L-O-V-E doing survey/research???


Oh it doesn’t matter if I’m doing something as innocuous as ordering photo prints/gifts online or even deciding what kinda project to attempt next...
No, I’m not speaking of work here,this project =>hobby  projects.

(For the uninitiated, the symbol means ‘implies’; I’m sorry but Math controls my life and it pays all the bills too!! Sorry,I’m rambling...just bear with my techie-side,is all I ask)   

In fact, when I asked to prepare a comprehensive list of items to be taken along on vacation, I didn’t sit down with a pen and paper like a normal person to jot down the stuff.....I HIT THE INTERNET!
Took loads of surveys, signed up at several websites and downloaded 7 different travel-lists, which I finally combined into one!!! 
{phew!} 
You got my point, right? LOL!!

Okie, back to my marmalade cake again!
India was playing Sri Lanka in Cricket World Cup Final today! I decided that I needed the sugar-rush either-way! If India won, then the cake would be a celebratory food J...if not, it could help me heal as a comfort food L

It’s a very simple recipe. And the best part is that all the ingredients are readily available in your refrigerator. So basically its a Bake-at-a-whim cake...which is the best kind J

  But you could make it more interesting by adding almond powder to the batter. You could also add sliced almonds as a topping of the cake. Here’s how I made it....

Ingredients:-


An 8-inch diameter baking tin,
Aluminium foil for lining
Electric egg-beater
Eggs 3nos.(medium sized)
Whole-wheat flour or Atta 7 heaped tablespoons
Orange Marmalade-4 heaped tablespoons
Sugar 5 ½ heaped tablespoon


How I did it.....

First of all, take the eggs in a large mixing bowl, add the sugar and beat it with an electric beater till light & frothy.

Add the marmalade.
Again beat it till the marmalade blends in.
(At this point I did try clicking pics, but my cellphone slipped and almost fell into the batter, so I just decided to skip taking pics at this stage)  

Now, keep the beater aside, it has done its part...pick up the spatula and gently fold in the flour into the egg-sugar-marmalade mix till all the flour is coated.



Take the baking tin, and line it with the aluminium foil like shown below. This helps to get the cake out of the tin with minimal effort and with zero-damage to the cake. 
{No ickiness!!*sigh*}



Pour the batter in the foil-lined tin.
You can add almond flakes at the top. I didn’t, coz I didn’t have the patience to slice the almonds while India played the finals.

Preheat the oven to 180 degrees(C) and bake it for 25 minutes.


After its baked, let it sit for 2mins inside the oven. Take it out and perform the ‘toothpick-test’.
(Insert a toothpick into the cake, if it comes out clean, you pass!)
And it’s doneJ

Now simply let it cool for a while and then detach the foil from the tin. Now, peel away the foil like this.



And Ooh la la! Rich Golden brown yummilicious cake!!!

You could dust it with icing sugar or cover it with marmalade for that added zing...But I don’t need anything....
